King trumpets, or baby king oyster mushrooms (Pleurotus eryngii), are picked before the caps spread and the stalks lengthen. They are tiny at this stage, with a small, pale brown crown atop a sturdy, ivory-white stem. The interesting part is the stem, which has a mild, somewhat sweet flavor and a subtle peppery edge that develops when cooked. It is dense, smooth, and wonderfully meaty in texture. The entire mushroom is acceptable when it is baby size since it lacks the woodiness that can form in the stems of fully grown specimens.
